Abstract

Selenium is a trace mineral that is essential to good health. Selenium is essential for normal thyroid function and thyroid hormone homeostasis, the iodothyronine deiodinases which responsible for the conversion of thyroxine (T4) to its active form, triiodothyronine (T3). So that, the aim of the current study is designed to evaluate the effect of supplemented Balady bread with various doses of sodium selenite on triiodothyronine (T3) and thyroxine (T4), lipid fractions and glucose in blood serum of the experimental normal or hyperlipidemic rats.
The results revealed that serum T3 increased significantly, serum T4, lipid fractions and glucose in blood serum has been decreased significantly after feeding with Balady bread supplemented with different doses of selenium for (8) weeks. Meanwhile, body weight gain and relative weight of organs decreased significantly. In addition, the present investigation revealed that high doses of selenium resulted in histopathological changes in thyroid gland, liver, kidney, heart and spleen. from the results, it was noticed that addition of 55 and 110 mg of sodium selenite gave the highest value in overall acceptability of tested Balady bread.
